French Onion Braised Chuck Roast

  • 3 pounds chuck roast
  • 4 cups sliced onions
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon fresh thyme
  • 2 bay leaves
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the chuck roast with salt and pepper.
  3. In a large Dutch oven, brown the roast on all sides over medium-high heat.
  4. Add the onions and garlic, cooking until softened.
  5. Pour in the broth, wine, Worcestershire sauce, thyme, and bay leaves.
  6. Cover and transfer to the oven.
  7. Braise for 3–4 hours until the meat is tender.
  8. Remove bay leaves and serve.
