This indulgent sticky toffee pudding recipe by Gordon Ramsay is a sweet delight perfect for dessert lovers.

Ingredients

  • 200 grams dates, pitted and chopped
  • 300 ml water
  • 1 teaspoon baking soda
  • 100 grams unsalted butter, softened
  • 150 grams brown sugar
  • 2 large eggs
  • 150 grams all-purpose flour
  • 1 teaspoon vanilla extract
  • 100 ml heavy cream
  • 50 grams chopped walnuts (optional)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, combine the dates and water; bring to a boil, then simmer for 10 minutes.
  3. Add baking soda to the date mixture, then let it cool.
  4. In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the cooled date mixture along with the flour and vanilla extract.
  7. Fold in the walnuts if using.
  8. Pour the batter into a greased baking dish and bake for 30-35 minutes or until a toothpick comes out clean.
  9. While the pudding is baking, prepare the toffee sauce by heating the heavy cream and brown sugar in a saucepan until the sugar dissolves.
  10. Once the pudding is done, pour the warm toffee sauce over it before serving.

Notes

  • Serve with vanilla ice cream for extra indulgence.
  • Make sure to let the pudding cool slightly before pouring the sauce over it.
