- 200 grams dates, pitted and chopped
- 300 ml water
- 1 teaspoon baking soda
- 100 grams unsalted butter, softened
- 150 grams brown sugar
- 2 large eggs
- 150 grams all-purpose flour
- 1 teaspoon vanilla extract
- 100 ml heavy cream
- 50 grams chopped walnuts (optional)
- Preheat your oven to 180°C (350°F).
- In a saucepan, combine the dates and water; bring to a boil, then simmer for 10 minutes.
- Add baking soda to the date mixture, then let it cool.
- In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the cooled date mixture along with the flour and vanilla extract.
- Fold in the walnuts if using.
- Pour the batter into a greased baking dish and bake for 30-35 minutes or until a toothpick comes out clean.
- While the pudding is baking, prepare the toffee sauce by heating the heavy cream and brown sugar in a saucepan until the sugar dissolves.
- Once the pudding is done, pour the warm toffee sauce over it before serving.
