  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, oregano, garlic powder, salt, and pepper.
  3. Coat the chicken breasts in the mixture and place them on the grill.
  4. Grill for 6-7 minutes on each side, or until cooked through.
  5. Remove from the grill and let rest for a few minutes before slicing.
  6. In a large bowl, combine cooked quinoa, tomatoes, cucumber, red onion, feta, olives, and parsley.
  7. Toss the salad with lemon juice and season with additional salt and pepper if needed.
  8. Top the salad with sliced grilled chicken.
  9. Serve immediately and enjoy!
