Greek Turkey Meatballs with Lemon Herb Rice

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup rice
  • 2 cups chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground turkey, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Shape the mixture into meatballs and place them on a baking sheet.
  4. Drizzle olive oil over the meatballs and bake for 20-25 minutes or until cooked through.
  5. Meanwhile, in a saucepan, bring chicken broth to a boil. Add rice and cook according to package instructions.
  6. Stir in lemon juice and parsley once the rice is cooked.
  7. Serve the meatballs over the lemon herb rice.

Notes

  • For extra flavor, add feta cheese to the meatball mixture.
  • These meatballs can be served with tzatziki sauce for added creaminess.
