  • 1 cup whole wheat flour
  • 1 teaspoon baking soda

  • 1/2 teaspoon nutmeg

  • 1/2 cup grated carrots
  • 1/2 cup applesauce
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the rolled oats, whole wheat flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the grated carrots, applesauce, honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the raisins.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes or until the edges are golden brown. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
