- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup grated carrots
- 1/2 cup applesauce
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup raisins
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine the rolled oats, whole wheat flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix the grated carrots, applesauce, honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.
- Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the raisins.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
