Hearty Cheddar Garlic Herb Potato Soup

  • 2 pounds potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1 tablespoon minced garlic
  • 1 teaspoon dried thyme
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Add potatoes, broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Use an immersion blender to puree the soup until smooth.
  4. Stir in the heavy cream and cheddar cheese until melted and well combined.
