Hearty Cheddar Garlic Herb Potato Soup

A comforting potato soup packed with flavor from cheddar, garlic, and herbs, complemented by turkey bacon for a delightful twist.

Ingredients

  • 4 cups diced potatoes
  • 1 cup chopped turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onions and garlic to the pot, sauté until translucent.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in heavy cream, cheddar cheese, thyme, and parsley. Cook until cheese is melted and the soup is creamy.
  5. Season with salt and black pepper. Top with crispy turkey bacon before serving.

Notes

  • For a thicker soup, blend a portion of the potatoes before adding the cream.
