High Protein Creamy Taco Soup

A delicious and nutritious creamy taco soup packed with protein from turkey bacon and chicken ham.

Ingredients

  • 4 slices turkey bacon
  • 1 pound chicken ham
  • 1 can black beans
  • 1 can corn
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheese

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and chop.
  2. Add the onion and garlic to the pot and sauté until soft.
  3. Add the chicken ham, black beans, corn, diced tomatoes, and chicken broth.
  4. Stir in the taco seasoning and bring to a simmer.
  5. Reduce heat and add heavy cream and shredded cheese, stirring until melted and combined.
  6. Serve hot topped with chopped turkey bacon.

Notes

  • This soup can be made ahead of time and reheated.
  • For a spicier kick, add jalapeños or hot sauce.
