  • 4 slices turkey bacon
  • 1 pound chicken ham, diced
  • 4 cups chicken broth
  • 3 cups potatoes, diced
  • 2 cups carrots, sliced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the diced chicken ham to the pot and cook until browned.
  3. Add onions and garlic, sautéing until translucent.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the diced potatoes, carrots, thyme, and rosemary. Season with salt and pepper.
  6. Reduce the heat and let simmer for 30 minutes, or until vegetables are tender.
  7. Return the turkey bacon to the pot, stir, and serve hot.

Notes

  • This stew can be made ahead of time and tastes even better the next day.
  • Feel free to add other vegetables such as peas or green beans.
