  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, combine grated carrots, flour, sugars, oil, eggs, and vanilla.
  3. Add baking powder, cinnamon, nutmeg, and salt, then mix until just combined.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Let it cool before frosting.
  7. For frosting, mix cream cheese, powdered sugar, and lemon juice until smooth.
  8. Spread frosting over cooled bars and cut into squares.

Notes
