  • 3 pounds chuck roast
  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons gochujang
  • 2 carrots sliced
  • 2 potatoes diced
  • 2 green onions chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Season the chuck roast with salt and pepper, then sear on all sides until browned.
  3. Add the chopped onion and minced garlic, and sauté until fragrant.
  4. Pour in the beef broth, soy sauce, brown sugar, and gochujang. Stir to combine.
  5. Add the carrots and potatoes, then cover the pot and reduce heat to low.
  6. Cook for 3-4 hours, or until the meat is tender and easily shreds with a fork.
  7. Garnish with chopped green onions before serving.
