- 3 pounds beef chuck roast
- 2 tablespoons vegetable oil
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon apple cider vinegar
- 1 carrot, sliced
- 1 bell pepper, sliced
- 2 green onions, chopped
- Preheat oven to 300°F (150°C).
- In a large Dutch oven, heat vegetable oil over medium-high heat. Sear the beef on all sides until browned.
- Add onions and garlic; sauté until softened.
- Stir in beef broth, soy sauce, brown sugar, sesame oil, and apple cider vinegar.
- Add carrots and bell pepper; cover and bake in the oven for 3 hours.
- Once done, let it rest before slicing. Garnish with green onions and serve.
