  • 3 pounds beef chuck roast
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon apple cider vinegar
  • 1 carrot, sliced
  • 1 bell pepper, sliced
  • 2 green onions, chopped

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a large Dutch oven, heat vegetable oil over medium-high heat. Sear the beef on all sides until browned.
  3. Add onions and garlic; sauté until softened.
  4. Stir in beef broth, soy sauce, brown sugar, sesame oil, and apple cider vinegar.
  5. Add carrots and bell pepper; cover and bake in the oven for 3 hours.
  6. Once done, let it rest before slicing. Garnish with green onions and serve.
