Layered Sweet Potato Butternut Squash Carrot Lasagna

A delicious and healthy lasagna made with layers of sweet potato, butternut squash, and carrots.

Ingredients

  • 2 cups sliced sweet potatoes
  • 2 cups sliced butternut squash
  • 1 cup grated carrots
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, layer sweet potatoes, butternut squash, carrots, and lasagna noodles.
  3. Spread ricotta cheese over the vegetables, then sprinkle with mozzarella and Parmesan.
  4. Pour marinara sauce over the top and season with oregano, basil, salt, and pepper.
  5. Repeat layers until ingredients are used up, finishing with a layer of sauce and cheese on top.
  6. Cover with foil and bake for 40 minutes, then remove foil and bake for an additional 15 minutes until golden and bubbly.
  7. Let cool for a few minutes before slicing and serving.

Notes

  • For a richer flavor, add sautéed onions and garlic.
  • Experiment with different vegetables as desired.
