- 2 cups sweet potato, peeled and sliced
- 2 cups butternut squash, peeled and sliced
- 2 cups carrots, peeled and sliced
- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 3 cups marinara sauce
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- Preheat the oven to 375°F (190°C).
- In a large baking dish, layer the sweet potato, butternut squash, and carrots.
- Between layers, spread ricotta cheese and some marinara sauce.
- Top with cooked lasagna noodles.
- Repeat layering until all ingredients are used.
- Finish with mozzarella and Parmesan cheese on top.
- Drizzle with olive oil and sprinkle with spices.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is golden.
- Let cool before serving.
