Layered Sweet Potato Butternut Squash Carrot Lasagna

A delightful blend of layered sweet potatoes, butternut squash, and carrots in a savory lasagna that will please any palate.

  • 2 cups sweet potato, peeled and sliced
  • 2 cups butternut squash, peeled and sliced
  • 2 cups carrots, peeled and sliced
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 3 cups marinara sauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, layer the sweet potato, butternut squash, and carrots.
  3. Between layers, spread ricotta cheese and some marinara sauce.
  4. Top with cooked lasagna noodles.
  5. Repeat layering until all ingredients are used.
  6. Finish with mozzarella and Parmesan cheese on top.
  7. Drizzle with olive oil and sprinkle with spices.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for an additional 15 minutes until cheese is golden.
  10. Let cool before serving.
