  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 4 cups vegetable broth
  • 1 lemon, juiced
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and cumin, cooking for an additional minute.
  3. Stir in the lentils and vegetable broth, bringing the mixture to a boil.
