Lemon Lentil Soup

A deliciously zesty twist on comfort food!

Ingredients

  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery, sauté until softened.
  3. Stir in garlic, cumin, and turmeric, cook for 1 minute.
  4. Add lentils and vegetable broth, bring to a boil.
  5. Reduce heat and simmer for 25-30 minutes until lentils are tender.
  6. Stir in lemon juice, and season with salt and pepper to taste.

Notes

  • For added creaminess, blend a portion of the soup before serving.
  • Great served with crusty bread.
