  • 4 large russet potatoes
  • 1/2 pound turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/4 cup chopped green onions

Instructions

  1. Start by cooking the turkey bacon in a large pot until crispy. Remove and crumble.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add diced potatoes and cover with chicken broth. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Once potatoes are soft, use a potato masher to partially mash them for a thicker texture.
  6. Stir in the heavy cream and half of the cheddar cheese until melted.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with crumbled turkey bacon, remaining cheese, sour cream, and green onions.
