Ingredients

  • 4 large russet potatoes
  • 1/2 cup turkey bacon, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Peel and dice the potatoes, then set aside.
  2. In a large pot, cook the turkey bacon until crispy; remove and set aside.
  3. In the same pot, sauté the onion and garlic until fragrant.
  4. Add the diced potatoes and chicken broth, and bring to a boil.
  5. Reduce heat, cover, and simmer until potatoes are tender.
  6. Using a potato masher, partially mash the potatoes for a creamy texture.
  7. Stir in the heavy cream and shredded cheddar cheese, and combine well.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with sour cream, turkey bacon, and green onions.

Notes

  • For a lighter version, substitute heavy cream with low-fat milk.
