  • 1 cup turkey bacon, chopped
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/2 cup green onions, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes, then bake for 45-60 minutes until soft.
  3. In a skillet, heat olive oil over medium heat and cook the turkey bacon until crispy.
  4. Once the potatoes are baked, let them cool slightly, then cut them in half and scoop out some flesh.
  5. Mix the scooped potato flesh with sour cream, cheese, garlic powder, paprika, salt, and pepper.
  6. Fill the potato skins with the mixture and top with remaining cheese and turkey bacon.
  7. Bake for an additional 10-15 minutes until cheese is bubbly.
  8. Garnish with green onions before serving.
