Mediterranean Quesadillas

A delicious and easy recipe for Mediterranean Quesadillas featuring turkey bacon.

  • 4 large flour tortillas
  • 8 ounces turkey bacon
  • 1 cup shredded mozzarella cheese
  • 1 cup spinach, chopped
  • 1 red bell pepper, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy, then remove and chop.
  2. In the same skillet, add olive oil, spinach, and red bell pepper. Sauté for 3-4 minutes.
  3. On one half of each tortilla, layer cheese, chopped bacon, sautéed vegetables, and sprinkle with garlic powder and Italian seasoning.
  4. Fold the tortillas over and grill in the skillet until golden brown and the cheese has melted.
  5. Serve warm with your favorite dipping sauce.

Notes

  • Feel free to add more vegetables such as mushrooms or zucchini for extra flavor.
  • These quesadillas can be made ahead and stored in the refrigerator.
