- 4 flour tortillas
- 8 ounces turkey bacon
- 1 cup spinach
- 1/2 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1/2 cup sun-dried tomatoes, chopped
- 1 tablespoon olive oil
- In a skillet, heat olive oil over medium heat and cook turkey bacon until crispy.
- Remove bacon and chop into small pieces.
- In the same skillet, add spinach and sun-dried tomatoes, cooking until spinach is wilted.
- On each tortilla, layer feta cheese, cooked spinach, turkey bacon, and mozzarella cheese.
- Fold the tortillas in half and cook on both sides in the skillet until golden brown and cheese is melted.
