Mediterranean Quesadillas

These Mediterranean Quesadillas are a delicious and easy way to add a flavorful twist to your meals. Packed with turkey bacon and fresh ingredients, they are sure to please everyone!

Ingredients

  • 4 flour tortillas
  • 8 ounces turkey bacon
  • 1 cup spinach
  • 1/2 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a skillet, heat olive oil over medium heat and cook turkey bacon until crispy.
  2. Remove bacon and chop into small pieces.
  3. In the same skillet, add spinach and sun-dried tomatoes, cooking until spinach is wilted.
  4. On each tortilla, layer feta cheese, cooked spinach, turkey bacon, and mozzarella cheese.
  5. Fold the tortillas in half and cook on both sides in the skillet until golden brown and cheese is melted.
  6. Cut into wedges and serve hot.

Notes

  • Feel free to add other Mediterranean ingredients like olives or artichokes.
