Mexican Street Corn and Shrimp

A delicious combination of Mexican street corn and shrimp, perfect for flavor lovers.

  • 4 ears corn, husked
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/4 cup lime juice
  • 1/2 cup cotija cheese, crumbled
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush the corn with olive oil and season with chili powder, garlic powder, salt, and pepper.
  3. Grill corn for about 10-15 minutes, turning occasionally until charred and tender.
  4. In a bowl, mix mayonnaise with lime juice and half of the cotija cheese.
  5. Remove corn from the grill and brush with the mayo mixture.
  6. Grill shrimp for 2-3 minutes on each side until cooked through.
  7. Serve corn topped with remaining cotija cheese and shrimp garnished with cilantro.

Notes

  • Adjust spices to your preference for more or less heat.
  • Can substitute grilled chicken for shrimp if desired.
