- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup mayonnaise
- 1/4 cup lime juice
- 1/2 cup cotija cheese, crumbled
- 2 tablespoons chopped cilantro
- Preheat grill to medium-high heat.
- Brush the corn with olive oil and season with chili powder, garlic powder, salt, and pepper.
- Grill corn for about 10-15 minutes, turning occasionally until charred and tender.
- In a bowl, mix mayonnaise with lime juice and half of the cotija cheese.
- Remove corn from the grill and brush with the mayo mixture.
- Grill shrimp for 2-3 minutes on each side until cooked through.
- Serve corn topped with remaining cotija cheese and shrimp garnished with cilantro.
