Mouthwatering One Pot Lasagna Soup

A comforting and hearty lasagna soup that combines the flavors of a classic lasagna in a simple one-pot dish.

  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 8 ounces lasagna noodles, broken
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, and sauté until soft.
  3. Add the diced chicken ham and cook for a few minutes.
  4. Stir in the crushed tomatoes and chicken broth, then bring to a boil.
  5. Add the broken lasagna noodles and Italian seasoning, then simmer until the noodles are tender.
  6. Stir in the ricotta and mozzarella cheese, mixing until melted and creamy.
  7. Top with fresh basil and chopped turkey bacon before serving.

Notes

  • For a vegetarian option, omit the turkey bacon and chicken ham.
  • Feel free to add your favorite vegetables to the soup.
