  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onions and garlic, sautéing until they are fragrant and translucent.
  3. Stir in the mixed vegetables and cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in the heavy cream, salt, pepper, thyme, and simmer for another 5 minutes.
  7. Remove from heat and garnish with fresh parsley before serving.
