Ingredients

  • 4 large potatoes, peeled and diced
  • 6 slices turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • 1 cup shredded cheese, for garnish
  • 2 green onions, chopped, for garnish

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Remove bacon and set aside, then add butter and sauté onions until translucent.
  3. Add the potatoes, chicken broth, garlic powder, salt, and pepper; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Blend the soup until smooth using an immersion blender.
  6. Stir in heavy cream and chicken ham; heat through.
  7. Serve hot, garnished with crispy bacon, cheese, and green onions.

Notes

  • For a vegetarian option, omit turkey bacon and use vegetable broth.
  • Can be made ahead and reheated.
