Outback Potato Soup

  • 4 large russet potatoes
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 medium onion, diced
  • 4 cups chicken broth
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Peel and chop the potatoes into small cubes.
  2. In a large pot, heat olive oil over medium heat. Add chopped turkey bacon and cook until crispy.
  3. Add diced onions and garlic, cooking until the onions are translucent.
  4. Stir in the potatoes and chicken broth, bringing to a boil.
  5. Reduce heat and simmer until the potatoes are tender.
  6. Once cooked, mash some of the potatoes to thicken the soup, then stir in the chicken ham, sour cream, and spices.
  7. Cook for an additional 5 minutes before serving.
  8. Garnish with shredded cheddar cheese.

Notes

  • For a vegetarian version, omit the turkey bacon and chicken ham.
  • Top with chives for added flavor.
