  • 4 cups peeled and diced potatoes
  • 1 cup chopped turkey bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons fresh chives, chopped

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, cooking until soft.
  3. Add diced potatoes and chicken broth, bringing to a boil. Reduce heat and simmer until potatoes are tender.
  4. Blend the soup until smooth, then return to heat.
  5. Stir in heavy cream, salt, pepper, and paprika. Heat through.
  6. Serve topped with crispy turkey bacon and chopped chives.

  • For extra flavor, add a splash of white wine while cooking the onions.
