Pumpkin & Gouda Stuffed Shells

Delight in the creamy goodness of pumpkin and gouda cheese stuffed in pasta shells for a comforting meal.

Ingredients

  • 12 jumbo pasta shells
  • 1 cup pumpkin puree
  • 1 cup gouda cheese, shredded
  • 1/2 cup ricotta cheese
  • 1/4 cup parmesan cheese, grated
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package directions until al dente. Drain and set aside.
  3. In a mixing bowl, combine pumpkin puree, gouda cheese, ricotta cheese, parmesan cheese, nutmeg, salt, pepper, and parsley.
  4. Stuff each pasta shell with the cheese mixture and place them in a baking dish.
  5. Bake in the preheated oven for 25-30 minutes until golden and bubbly.

Notes

  • For extra flavor, add garlic powder to the cheese mixture.
  • Top with additional gouda cheese before baking for a cheesier dish.
