- 12 jumbo pasta shells
- 1 cup pumpkin puree
- 1 cup gouda cheese, shredded
- 1/2 cup ricotta cheese
- 1/4 cup parmesan cheese, grated
- 1/2 teaspoon nutmeg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- Preheat the oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package directions until al dente. Drain and set aside.
- In a mixing bowl, combine pumpkin puree, gouda cheese, ricotta cheese, parmesan cheese, nutmeg, salt, pepper, and parsley.
- Stuff each pasta shell with the cheese mixture and place them in a baking dish.
- Bake in the preheated oven for 25-30 minutes until golden and bubbly.
Notes
- For extra flavor, add garlic powder to the cheese mixture.
- Top with additional gouda cheese before baking for a cheesier dish.
