  • 8 corn tortillas
  • 1 cup enchilada sauce

  • 1/2 teaspoon chili powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix shredded chicken, queso cheese, diced onions, garlic powder, cumin, and chili powder.
  3. Warm the tortillas in a pan for a few seconds until pliable.
  4. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in a baking dish.
  5. Pour enchilada sauce over the top and sprinkle with additional queso cheese.
  6. Bake for 20-25 minutes until bubbly and golden.
