  • 2 cups water

  • 2 eggs
  • 1/4 cup milk
  • 1 teaspoon baking powder

Instructions

  1. In a pot, combine rinsed quinoa, water, and salt. Bring to a boil, then simmer for 15 minutes.
  2. Let quinoa cool, then blend with eggs, milk, baking powder, and vanilla until smooth.
  3. Heat a non-stick skillet over medium heat and pour batter to form pancakes.
  4. Cook until bubbles form, then flip and cook until golden brown.
