  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon thyme
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chives, chopped

Instructions

  1. Bake the potatoes at 400°F for about 45 minutes until tender.
  2. In a skillet, cook the turkey bacon until crispy and then set aside.
  3. In the bacon drippings, sauté the onions and garlic until translucent.
  4. Cube the baked potatoes and add them to the skillet along with the chicken ham.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the heavy cream and season with salt, pepper, and thyme.
  7. Blend the soup for a smoother texture if desired, then stir in the butter.
  8. Garnish with cheddar cheese and chives before serving.

Notes

  • For a vegetarian option, omit the bacon and ham and use vegetable broth.
