  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1 small red onion, diced
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half, then place them on a baking sheet.
  3. Cook the turkey bacon until crispy, then chop into pieces.
  4. Add the diced red onion and turkey bacon to the potatoes, drizzle with olive oil, and toss to coat.
  5. Roast in the oven for 25-30 minutes or until golden brown.
  6. In a separate bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.
  7. Once the potatoes are done, let them cool slightly before mixing with the dressing and parsley.
