  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup French onion soup
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the roast with salt and pepper.
  3. In a large oven-safe pot, heat the olive oil over medium-high heat.
  4. Brown the roast on all sides, then remove it from the pot.
  5. Add the onions and garlic, cooking until soft.
  6. Stir in the beef broth and French onion soup, then return the roast to the pot.
  7. Add the bay leaves and thyme.
  8. Cover and bake for 3-4 hours, or until tender.
  9. Remove bay leaves before serving.
