Savory Red Wine Braised Brisket

A deliciously rich and tender brisket dish braised in savory red wine.

  • 3 pounds beef brisket
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 6 sprigs fresh thyme
  • 2 tablespoons tomato paste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat.
  3. Season the brisket with salt and pepper, then sear it on both sides until browned.
  4. Remove the brisket and set aside. In the same pot, add onions and garlic, cooking until softened.
  5. Pour in red wine, scraping up brown bits, and let it simmer for a few minutes.
  6. Add beef broth, thyme, and tomato paste, then return the brisket to the pot.
  7. Cover and transfer to the oven; braise for about 3 hours until tender.
  8. Remove from the oven, let rest for 10 minutes, then slice and serve.

Notes

  • For extra flavor, sear the brisket the day before and let it marinate overnight.
  • Pair with mashed potatoes or crusty bread for a complete meal.
