Short Rib Ragu

A rich and hearty short rib ragu that will warm your soul and satisfy your cravings for comfort food.

Ingredients

  • 2 pounds short ribs
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 1 can (14 oz) crushed tomatoes
  • 2 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Season short ribs with salt and pepper and brown them on all sides in the hot oil.
  3. Remove short ribs and set aside. In the same pot, add onion, carrots, and celery, cooking until softened.
  4. Add garlic and cook for an additional minute.
  5. Pour in the red wine, scraping up any browned bits from the bottom.
  6. Add crushed tomatoes, beef broth, bay leaf, and thyme.
  7. Return short ribs to the pot, cover, and simmer for about 2.5 to 3 hours until tender.
  8. Remove ribs, shred the meat, and return it to the sauce. Discard the bones and bay leaf.

Notes

  • Serve ragu over pasta or polenta for a hearty meal.
  • Best made a day in advance, flavors improve overnight.
