- 2 pounds short ribs
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 cup red wine
- 1 can (14 oz) crushed tomatoes
- 2 cups beef broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
 
	 
	
		
		
			
- In a large pot, heat olive oil over medium heat.
- Season short ribs with salt and pepper and brown them on all sides in the hot oil.
- Remove short ribs and set aside. In the same pot, add onion, carrots, and celery, cooking until softened.
- Add garlic and cook for an additional minute.
- Pour in the red wine, scraping up any browned bits from the bottom.
- Add crushed tomatoes, beef broth, bay leaf, and thyme.
- Return short ribs to the pot, cover, and simmer for about 2.5 to 3 hours until tender.
- Remove ribs, shred the meat, and return it to the sauce. Discard the bones and bay leaf.
