Slow Cooker Taco Casserole

A delicious and simple slow cooker taco casserole that brings comfort food to a new level with minimal effort.

Ingredients

  • 1 pound ground beef
  • 1 taco seasoning packet
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 1 cup salsa
  • 8 taco shells, crushed

Instructions

  1. In a skillet, brown the ground beef over medium heat until cooked through.
  2. Stir in taco seasoning and cook for an additional 2 minutes.
  3. In the slow cooker, add black beans, corn, diced tomatoes, shredded cheese, and salsa.
  4. Layer the cooked beef on top, then add the crushed taco shells.
  5. Cover and cook on low for 6 hours or high for 3 hours until heated through.
  6. Serve hot, garnished with additional cheese if desired.

Notes
