Feta Quesadillas

These Spinach and Feta Quesadillas are a delicious and easy way to enjoy flavorful comfort food. Perfect for a quick lunch or dinner!

Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, add olive oil and spinach. Cook until wilted.
  2. In a bowl, mix cooked spinach with feta, mozzarella, garlic powder, salt, and pepper.
  3. Spread the mixture on half of each tortilla and fold over.
  4. In the same skillet, cook the quesadillas until golden brown on both sides and the cheese is melted.
  5. Slice and serve warm.

Notes

  • For extra flavor, add diced tomatoes or olives to the filling.
  • Remove the quesadillas from the heat as soon as the cheese is melted to avoid burning.
