  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup brown sugar
  • 2 cups mixed vegetables (carrots, potatoes)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  3. Add chicken thighs to the skillet, seasoning with salt, pepper, and thyme. Brown them on both sides.
  4. Pour in apple cider and sprinkle brown sugar over the chicken.
  5. Add mixed vegetables to the skillet, stirring to coat.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
