- 1 medium spaghetti squash
- 1 pound spicy Italian sausage
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Preheat the oven to 400°F (200°C).
- Slice the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle the inside with olive oil, and season with salt and pepper.
- Place cut side down on a baking sheet and roast for 40 minutes.
- In a skillet, heat olive oil over medium heat and add diced onion and garlic, sautéing until soft.
- Add the spicy Italian sausage and cook until browned.
- Stir in broccoli and Italian seasoning, cooking until broccoli is tender.
- Mix in half of the cheddar cheese.
- Once spaghetti squash is cooked, shred the inside with a fork and mix with the sausage and broccoli mixture.
- Stuff the mixture back into the squash halves and top with remaining cheddar cheese.
- Return to the oven and bake for an additional 10 minutes, until cheese is melted and bubbly.
- Serve warm and enjoy!
