Stuffed Spaghetti Squash with Broccoli Spicy Italian Sausage and Cheddar Cheese

Delicious stuffed spaghetti squash featuring zesty spicy Italian sausage and cheddar cheese, perfect for a hearty meal.

  • 1 medium spaghetti squash
  • 1 pound spicy Italian sausage
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the inside with olive oil, and season with salt and pepper.
  4. Place cut side down on a baking sheet and roast for 40 minutes.
  5. In a skillet, heat olive oil over medium heat and add diced onion and garlic, sautéing until soft.
  6. Add the spicy Italian sausage and cook until browned.
  7. Stir in broccoli and Italian seasoning, cooking until broccoli is tender.
  8. Mix in half of the cheddar cheese.
  9. Once spaghetti squash is cooked, shred the inside with a fork and mix with the sausage and broccoli mixture.
  10. Stuff the mixture back into the squash halves and top with remaining cheddar cheese.
  11. Return to the oven and bake for an additional 10 minutes, until cheese is melted and bubbly.
  12. Serve warm and enjoy!

Notes

  • You can substitute turkey sausage for a leaner option.
  • This dish can be made ahead of time and reheated.
