Sun Dried Tomato Lemon Baked Salmon and Asparagus

  • 4 salmon fillets
  • 1 cup sun dried tomatoes, chopped
  • 2 lemons, juiced
  • 1 tablespoon olive oil
  • 1 pound asparagus, trimmed
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, lemon juice, garlic, salt, and pepper.
  3. Place salmon fillets in a baking dish and pour the mixture over the top.
  4. Add the sun dried tomatoes on top of the salmon.
  5. Arrange the asparagus around the salmon and drizzle with olive oil.
  6. Bake for 15-20 minutes or until salmon is cooked through.
  7. Serve immediately.

Notes

  • For extra flavor, marinate the salmon for 30 minutes before baking.
