Sweet Potato Corn Chowder

A warm and creamy chowder that combines the sweetness of sweet potatoes with the savory flavor of turkey bacon, perfect for a comforting meal.

  • 2 cups sweet potatoes, peeled and diced
  • 1 cup corn kernels
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot, sautéing until softened.
  3. Add diced sweet potatoes, corn, and broth. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender.
  4. Stir in the heavy cream and thyme, cooking until warmed through.
  5. Season with salt and pepper and serve, topping with crispy turkey bacon.
