Sweet Potato & Lentil Shepherd’s Pie

A hearty and healthy take on the classic shepherd’s pie, utilizing sweet potatoes and lentils for a nutritious meal.

Ingredients

  • 2 cups cooked lentils
  • 4 cups sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil sweet potatoes until tender, then mash them with a bit of salt.
  3. In a pan, heat olive oil and sauté onions, garlic, carrots, and celery until softened.
  4. Add lentils, vegetable broth, thyme, salt, and pepper to the pan, and simmer for 10 minutes.
  5. Spread lentil mixture in a baking dish and top with mashed sweet potatoes.
  6. Bake for 25-30 minutes until the top is slightly crispy.

Notes

  • For a creamier sweet potato topping, add a splash of milk or a dollop of butter.
  • Feel free to add your favorite vegetables to the filling.
