  • 4 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 can diced tomatoes
  • 2 cups spinach

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until translucent.
  2. Add diced sweet potatoes and lentils, stirring to combine.
  3. Pour in vegetable broth, diced tomatoes, cumin, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and let it simmer for about 30 minutes, or until lentils are tender.
  5. Stir in spinach and cook for an additional 5 minutes.
