Vegan Zucchini Rollatini

A delicious and healthy take on traditional rollatini, packed with flavor and plant-based goodness.

Ingredients

  • 4 medium zucchinis
  • 1 cup cashew cheese
  • 2 cups marinara sauce
  • 1/4 cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice zucchinis thinly lengthwise and lightly grill or sauté them to soften.
  3. In a bowl, mix cashew cheese, nutritional yeast, garlic powder, oregano, salt, and pepper.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. For each zucchini slice, add a spoonful of the cheese mixture, roll it up, and place it seam-side down in the dish.
  6. Cover the zucchini rolls with remaining marinara sauce.
  7. Bake for 20-25 minutes until heated through.

Notes

  • For added flavor, sprinkle fresh basil on top before serving.
