  • 2 medium zucchinis
  • 1 cup ricotta cheese (or tofu for vegan option)
  • 1 cup marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix ricotta cheese, garlic powder, oregano, salt, and pepper.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Spoon the cheese mixture onto the zucchini strips and roll them up.
  6. Place the rolls in the baking dish seam side down.
  7. Cover the rolls with remaining marinara sauce and drizzle with olive oil.
  8. Bake for 25-30 minutes until heated through.
