Vegan Zucchini Rollatini

A delicious and healthy alternative to traditional rollatini using zucchini instead of pasta.

Ingredients

  • 4 medium zucchinis
  • 1 cup ricotta-style vegan cheese
  • 1 cup spinach, chopped
  • 1 cup marinara sauce
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix the vegan cheese, spinach, garlic, Italian seasoning, salt, and pepper.
  4. Spread some marinara sauce on the bottom of a baking dish.
  5. Fill each zucchini strip with the cheese mixture and roll them up.
  6. Place the zucchini rolls in the baking dish seam side down.
  7. Top with remaining marinara sauce and drizzle with olive oil.
  8. Bake for 25-30 minutes until heated through.

Notes

  • Try adding some nutritional yeast for a cheesy flavor.
  • You can add other vegetables like mushrooms or bell peppers to the filling.
