Ingredients

  • 4 medium zucchinis
  • 2 cups vegan ricotta cheese
  • 1 cup marinara sauce
  • 1/2 cup nutritional yeast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. Lightly salt the zucchini strips and let them sit for 10 minutes to release excess moisture.
  4. In a bowl, mix vegan ricotta with nutritional yeast, garlic powder, salt, black pepper, and fresh basil.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Place a spoonful of the ricotta mixture on each zucchini strip, roll them up, and place them seam-side down in the baking dish.
  7. Top with remaining marinara sauce and drizzle with olive oil.
  8. Bake for 25-30 minutes until golden and bubbly.
