  • 2 cups vegetable broth
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
  • 1 cup corn
  • 1 can black beans, rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, combine quinoa and vegetable broth; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a separate bowl, mix cooked quinoa with bell peppers, zucchini, corn, black beans, cumin, and chili powder.
  5. Transfer the mixture to a baking dish, top with cheese, and cover with foil.
  6. Bake for 30 minutes; then remove foil and bake for an additional 10 minutes, until cheese is bubbly.
