Avocado Salsa Shrimp Salad

A delightful and refreshing dish combining juicy shrimp with zesty avocado salsa.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, combine shrimp, olive oil, salt, and pepper.
  2. Grill the shrimp for about 3 minutes on each side until pink and cooked through.
  3. In another bowl, mix together diced avocados, cherry tomatoes, red onion, cilantro, and lime juice.
  4. Add the grilled shrimp to the salsa mixture and gently stir to combine.
  5. Serve chilled or at room temperature.

Notes

  • For extra flavor, add diced jalapeños to the salsa.
  • This salad can be made ahead of time; however, add the avocado just before serving to prevent browning.
